Unlike normal market salmon (3/4kg), we use 6kg+ large fish only, larger salmon offer a superior sashimi experience. Fish over 6kg develop more even fat marbling, firmer muscle structure, and a naturally richer flavour, making each slice smoother, juicier, and more stable in texture compared with smaller market fish.
