Raised in the cold, fast-flowing waters of the Scottish Highlands and islands, far from industrial pollution, these salmon benefit from pristine environments and responsible, low-density farming practices. This natural setting allows the fish to grow strong, firm, and clean in flavour — an essential foundation for top-grade sushi and sashimi.
Unlike mass-market salmon commonly found in UK supermarkets, we select only 6kg+ large-grade fish, known for their superior fat distribution and naturally buttery texture. The larger size results in thicker, more consistent muscle structure and a fine balance of marbling ideal for raw consumption.
