Our premium sashimi-grade Dutch Kingfish (Hiramasa) is sustainably farmed in the clean, controlled waters of the Netherlands, ensuring firm texture, delicate sweetness, and exceptional purity of flavour. Each pack is prepared skinless and flash-frozen to lock in freshness, ready for immediate culinary use.

Unlike standard market yellowtail, we select only mature Dutch Kingfish weighing 2.5kg+. Larger, fully grown Hiramasa develop a more refined fat structure, cleaner sweetness, and a smoother, silkier mouthfeel. The balanced oil content enhances umami depth without heaviness, delivering a rich yet elegant finish highly valued in premium sashimi.

Our cuts may include a small amount of natural bloodline (dark red meat). This is completely normal for Kingfish and does not affect freshness or safety. If preferred, it can be easily trimmed before serving.

This pack includes randomly cut portions, offering a balanced combination of lean and lightly marbled sections. Ideal for sashimi, nigiri, crudo, ceviche, poke bowls, or elegant pan-searing.

We carefully hand-trim each portion, though a few fine pin bones may naturally remain. Please check before consuming.

All orders are shipped frozen via UPS or FedEx next-day delivery to maintain peak freshness. To prepare, defrost naturally at 0–4°C. A small amount of moisture loss is normal—simply pat dry with a kitchen towel before consumption. Any unused portions should be kept frozen, and once opened, should be consumed within 24 hours.
