Our premium sashimi-grade salmon comes from four carefully selected Scottish farms in the pristine waters of the Highlands, ensuring firm texture and exceptional flavour. Each pack is prepared skinless and flash-frozen, ready to use in a variety of dishes.
Unlike standard market salmon, we choose only 6kg+ salmon, as larger salmon develop richer marbling, fuller flavour, and more consistent fat distribution.
Our cuts may include a small amount of natural dark meat. This is normal for salmon and does not affect freshness or safety. If you prefer, it can be removed with a quick trim.
This back loin portion is one of the most classic cuts, offering a firm texture with a moderately high fat content—second only to the belly. It’s well-suited for sashimi, grilling, and light-flavoured preparations that highlight the natural richness of the fish.
We hand-remove bones from every cut, though a few fine pin bones may naturally remain. Please check before consuming.

All orders are shipped frozen via UPS or FedEx next-day delivery to maintain peak freshness. To prepare, defrost naturally at 0–4°C. A small amount of moisture loss is normal—simply pat dry with a kitchen towel before consumption. Any unused portions should be kept frozen, and once opened, should be consumed within 24 hours.
